Roasted Beet Hummus

It’s also SO easy to make. After roasting your beet, you just add all the ingredients into a food processor until smooth. It will stay for a week so its great to make at the beginning of a very busy week.
- 1 small roasted beet
- 1 3/4 cup chickpeas
- juice of half a large lemon
- pinch salt and black pepper
- 2 large cloves garlic, minced
- 2 tbsp tahini
- 1/4 cup extra virgin olive oil
Once your beet is roasted and cooled, cut it and place it in your food processor. Blend until only small bits remain.
Add remaining ingredients except for olive oil and blend until smooth.
Add in olive oil as the hummus is mixing.
Taste and adjust seasonings as needed, If it’s too thick, add a bit of water.
