Healthy Chocolate Zucchini Loaf

Lately, I've been a little obsessed with how versatile zucchini is and I've been experimenting with adding it to my oats, chia pudding and even my smoothies. The results have been amazing as they add so much creaminess to any recipe and I feel good knowing I've snuck in more fiber and veggies into my diet. The beloved zucchini is SO good for us and we could all benefit from eating more of it in our diet.

  • Good source of Lutein which helps to promote healthy eyesight
  • Good source of folates, which supports a healthy metabolism
  • High in magnesium (aka the natural chill pill) and helps with muscle cramps
  • High in Vitamin C, which strengthens immunity and is anti ageing as well 

Since I've been loving my raw cacao-banana-zucchini smoothie bowls, I knew chocolate and zucchini make the perfect match. It wasn't long before I started experimenting with a baked good and the result was this incredibly quick and easy to prepare loaf. I know what you're probably thinking so you're just going to have to trust me on this one...

This rich and chocolatey bread is so deceiving because no one will ever know that the secret ingredient that makes it so moist and fluffy is the beloved zucchini. The nice thing about this recipe is that you can easily make it into muffins (just bake for ~20 minutes) and the texture will remain the same. Read on because this chocolate zucchini bread is seriously delicious and you're going to LOVE it.

Healthy Chocolate Zucchini Loaf

You Need:

  • 1 + ¼ cup oat flour (you can use oats and ground them into flour using a food processor
  • 1 C of shredded zucchini 
  • 3 TBSP unsweetened applesauce
  • 2 large eggs 
  • 1 tsp pure vanilla extract
  • 1/2 c raw cacao powder 
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp espresso powder )
  • 1/4 tsp of sea salt
  • 1/2 C melted coconut oil
  • 1/3 C maple syrup cup
  • 1 C chocolate chips  


  1. Preheat your oven to 150F and line a loaf pan with parchment paper. 
  2. Peel and then grate your zucchini and squeeze out any extra liquid with a paper towel. Set aside.
  3. In a large bowl mix the dry ingredients. 
  4. In a smaller bowl whisk the wet ingredients.
  5. Incorporate wet ingredients into dry ingredients bowl and whisk together. 
  6. Fold in the grated zucchini and the chocolate chips. 
  7. Pour batter into your pan and bake for ~40 minutes or until a toothpick comes out clean.
