Carrot Cake Bites

These little bliss balls are the perfect combo of flavors and spices. They're perfect for when you want to change it up from the usual chocolatey, date based bliss ball recipes out there. I also love that they are not too sweet or rich like other bliss balls so you can really enjoy them as a daily snack or breakfast on the go! 

Carrot Cake Bites
(makes 8-10 balls)

What You Need

  • 1 medium carrot
  • ¼ cup almonds
  • ¼ cup walnuts
  • ½ cup coconut (+ more for rolling)
  • 2 tablespoons raisins
  • 2 tablespoons maple syrup
  • 1½ teaspoon of coconut oil
  • 1½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon ginger

What to Do

  1. Finely grate the carrots.
  2. Put the almonds and walnuts in a food processor until they begin to break down into small pieces. 
  3. Add remaining ingredients except carrots and mix again.
  4. Add the carrots and stir until well combined.
  5. Form the mixture into balls.
  6. Place in refrigerator for an hour to set.
